Our first few batches, while pleasant, lacked the “wow” factor we were striving for. The combination of lime and chilli, when presented in equal measure, resulted in a flavour profile that was surprisingly underwhelming. It neither captured the invigorating essence of lime nor the thrilling heat of chilli. The overall taste was muted, leaving no lasting impression. Undeterred, we decided to pivot our approach. Instead of one drink with a balanced flavour profile, we would create two distinct gins, each highlighting one of the key ingredients. This decision allowed us to fully explore and enhance the unique characteristics of both lime and chilli, creating two exceptional products that each offered a memorable drinking experience.
